Blue Cheese Almond Guacamole Recipe

winnerIt’s almost time for Cinco de Mayo and we are celebrating with a fiesta! Being a fan of easy recipes, I’m whipping up a batch on super simple enchiladas and wanted to add a dish of my favorite Mexican dip, guacamole. I had recently gotten my hands on a copy of Truly Mexican by Roberto Santibanez and a basket of avocados from The Amazing Avocado. I found so many variations on the typical recipe. We decided to try the Blue Cheese & Smoked Almond version and the results were well worth the ten minute prep time. I noticed the teens were sneaking bites before dinner with a bag of tortilla chips instead of waiting to add the guacamole to their plate. I’m sharing the recipe below.

An adaptation of a classic Mexican dish with blue cheese and smoked almonds.
Ingredients
  • 2 Tablespoons finely chopped white onion
  • 1 tablespoon minced fresh jalapeno
  • 1 teaspoon kosher salt
  • ¼ cup chopped cilantro
  • 1 tablespoon freshly squeezed lime juice
  • 1 large ripe avocado
  • ¼ cup coarsely chopped smoked almonds
  • 3 tablespoons crumbled blue cheese
  • extra smoked almonds and blue cheese for garnish
Instructions
  1. Mash the onion, chile, salt and of the cilantro to a paste. Stir in the lime juice. Peel the avocado, remove the pit and scoop out the flesh. Mash the avocado and add it to the onion mixture. Add the rest of the cilantro, the almonds and the blue cheese, toss well and mix with a fork. Season to taste with additional lime juice and salt. Garnish with almonds and blue cheese.

When people think of avocados, they usually think of the typical uses; ordinary guacamole or as an addition to salads.  I’ve found some “out of the box” ways to enjoy my avocados.  How about a veggie ALT? That’s Avocado, Lettuce and Tomato.  Just prepare the sandwich as usual and instead of bacon, substitute thinly sliced avocado.  Or go hog wild (sorry, I couldn’t resist) and add the bacon too.  Either way, it’s all good.     I Love to put avacodo into my salads. I love to use it on turkey sandwiches- I smash it and smear it on as if it were butter.. lol, only I put it on a lot thicker! We love guac to dip into, to put into our tacos or fajitas.

    We are all about the avacado here. We will mix it with mayo for sanwiches, put them on salads and make lots of salsa when the tomatoes come in! Never used bleu cheese, but I am definitely trying this recipe soon!

    I bake mine in the oven, after breading them with Panko. They crisp up great and are creamy inside. We put those inside of soft taco’s with black beans and whatever we have on hand for tacos.

    I love avocado on a turkey sandwich. I use it instead of mayonnaise. I add tomato and onion. Yum!!

    I am pretty traditional as far as making guacamole, but I like to use it on sandwiches (instead of other condiments), on my veggie burgers, and of course on any kind of taco or burrito or rice bowl that I make.

    I like to chargrill avocado halves & fill them with mango salsa. It is a great “dip” with corn chips.

    I don’t have a special recipe but I love avocados. I could live on them. Sometimes for dinner I will just have an avocado with salt on it. Yum!

    I love avacado. I prepare guacamole the typical way but I have been seeing some sweet dishes call for avacado and I am dying to try some. There’s one with avacado milk sugar and vanilla that looks so good.

    My spouse makes all kind of dips and salads with guacamole. My claim to fame is that I try to plant the big round guacamole seed and pray that it grows. It is amazing after several weeks a long stem with a few leaves are produced. Not much luck after that period of time, perhaps I use too much kindness! drmrs 4/21/2013

    It used to be my world famous (easy) guacamole: smashed avocado, lime juice, chopped vine ripe tomatoes & cilantro, but I just made an awesome, healthy sandwich: nitrate free smoked turkey, avocado slices, red onion, smattering of mustard, drizzle balsamic vinegar mix with juice from an orange, serve on toasted spelt! Delish

    Blue Cheese and Bacon Guacamole. It’s so delicious. I use a simple guacamole base, and just add a little blue cheese and put crispy bacon crumbles on top!

    I LOVE Avocados and I eat them all the time. A number of years ago, we spent several weeks in Sweden visiting relative. One ubiquitous treat (it almost seemed like the National dish!) is a simple salad/appetizer that is basically an avocado halves and filled with fresh cooked cold shrimp and some kind of very light cream & mayo type dressing.) This dish is served EVERYWHERE – with tiny variations (like the size of the shrimp) And I think I enjoyed it almost everyday in every town/restaurant we visited!

    Back at home – I still make that heavenly dish for special occasions – but one of my most favorite lunches is simply this:

    Peel and dice a ripe avocado into a salad bowl or plate. Generously squeeze (to taste) fresh lemon juice all over it and season wit taste with salt and pepper (preferably freshly ground) and top with a nice mound of your favorite brand of cottage cheese and ENJOY. I enjoy this simple, healthy dish several times week.

    And finally, I really can’t imagine any turkey or chicken sandwich without avocado and tomato slices it – nor any taco, taco salad, tostada or quesadilla without some avocado for garnish!

    I get the packaged guacamole mixes at Safeway and just grab a few avocados and mix them together, since I don’t know how to make it from scratch..

    I love a Spicy avocado seafood salad…. make a seafood salad in much the same way you make chicken salad but use shrimp/crab etc instead. Ad chopped green chiles & tabasco to taste, serve in Avocado halves that have been peeled & sprinkled w/juice of lemon or lime. YUM!!!((1955nursehjc4me(at)myway(dot)com)) Thanks for the chance…..
