Lemony Strawberry Parfait

With Summer in full swing, strawberries are at their peak and often on sale, ensuring thrifty snacks. I found this yummy strawberry parfait from Family Fun for an updated twist on a classic.

1 cup heavy cream
4 tablespoons sugar, divided
2 tablespoons fresh lemon juice, divided
3 cups fresh strawberries, sliced

n a chilled medium-size bowl, whip the heavy cream with 2 tablespoons of the sugar and 1 tablespoon of the lemon juice. Gradually add in the remaining sugar and lemon juice, whipping until the cream is thick but not overwhipped.
Alternate layers of whipped cream and sliced strawberries in 8-ounce parfait glasses, then top each treat with a dollop of cream. Serves 4.

Yum! This looks good – I will have to make something like this with a modification on the heavy cream to save calories. Thanks for sharing.
